As soon as your fresh truffles are delivered, please wrap them in dry paper towel and store them in a sealed container inside your fridge. Do not freeze your fresh truffle and do not store them within rice! The rice will steal the aroma and taste of your truffles and have them spoil faster. We suggest keeping them with a whole, unbroken chicken egg or two depending on the amount of truffles you have at your disposal. Make sure the eggs are not pressed against the truffles and if using a tall vertical container, make sure the truffles are above the eggs, never underneath them. When frying or boiling the egg, you'll be able to taste the truffles in the egg-yolk. Duck fat, butter and cheese are just a few other ingredients that can get "truffle-ized" really well.
We recommend having your truffles within the first 48 hours after delivery, however if properly stored, Black Summer Truffles can last up to 5 days. Just remember to replace the paper towel around them every 24 hours. Before serving them, make sure the truffles are at room temperature for about 2 hours. The pronounced, rich flavour profile of the truffle is best brought out when thinly shaved atop complementary foods - often pasta dishes or anything with oils or creamy content that will allow the flavour to be infused. Truffles are mostly used as a garnish or finishing touch, but remember; they are the star of your dish! Shave them as soon as you plate your dish; while it is still steaming hot, so that the truffle shavings can “sweat” and release its flavours and aroma. Do not combine them with strong, competing flavours (like blue cheese, for example) to avoid losing the complexity of the truffle's taste.
